Freeze-drying, also known as lyophilization, is a highly specialized preservation technique for removing moisture from a product while maintaining its structure and integrity. Freeze-drying involves a few distinct steps:

    • Freezing: The process begins with freezing. Rapid freezing is employed to minimize the formation of large ice crystals that can damage the structure. Temperatures as low as -50 to -80 degrees Celsius are to solidify the product.
    • Primary Drying (Sublimation): After freezing, the product is transferred to a vacuum chamber. Freeze-drying is carried out under low-pressure conditions to facilitate sublimation. The pressure in the chamber is reduced to decrease the boiling point of water, allowing it to transition directly from a solid (ice) to a gas (vapor) without passing through the liquid (water) phase.
    • Heat Application: Heat is applied to the frozen product in the vacuum chamber. This energy input increases the temperature just enough to facilitate the sublimation process. At this low pressure, the frozen water molecules undergo sublimation, transforming into water vapor directly without becoming liquid.
    • Secondary Drying: Once most of the water has sublimed, the product goes through a secondary drying phase, also known as desorption. In this step, the remaining bound or adsorbed water is removed. The temperature is increased slightly, but still maintained below the product’s melting point or degradation temperature to prevent any structural damage.
    • Packaging: After freeze-drying and secondary drying, the product is sealed in airtight containers to prevent moisture absorption from the surrounding environment. This step helps maintain the product’s stability and extends its shelf life.
